Platanos - Plantains in syrup

Plantains can be cooked many ways and are served with breakfast, as a vegetable and used for dessert as well. I like them this way as a treat and they are easy to make too.  
  • 2 cups of water
  • 1/2 cup of sugar
  • 1 cinnamon stick broken in half
  • 4 ripe plantains with black skins, peeled and cut into 1/2 inch diagonal slices ( I also sometimes just cut them in half length wise )
  • 1/4 cup corn oil  
Simmer the water, sugar and cinnamon stick together over medium heat for about  5 minutes. Meanwhile, fry the plantains slices in oil in a skillet over medium heat, until brown on both sides. Drain on paper towel. Add the slices to the syrup and simmer slowly for 10 minutes more. Serve warm.
